Breakfast. Sandwich.

You guys, I love me a breakfast sandwich. Slap eggs and bacon together with some bread and add cheese and I’m in heaven. It doesn’t take much. But when you mix it up a bit and put goat cheese and avocado in the mix? I cannot handle myself. I will make weird faces while devouring that thing. I don’t even care what you think of me. It’s goat cheese, you guys. Goat cheese.

So here ya go. A “recipe” for the best breakfast sandwich ever. But is it really a recipe if it’s not really measurements but just a ton of pictures to entice you to make this for yourself as soon as possible? But really, you should. Because, ya know, the goat cheese.

Ingredients
Avocado, sliced
Tomato, sliced
Bacon, fully cooked and crispy
Bread (I used sourdough but next time I am going all out with croissants….because I apparently have no problem ingesting my daily allowance of calories before noon)
Eggs (I did mine over easy and scrambled them for Johnny)
Hot sauce, optional (OMG I used this stuff from Cochon Butcher, a restaurant in New Orleans. We bought some when we went on our trip and I am almost out and will probably cry when the bottle is empty)

Assembly
1. Toast your bread and spread a good amount of goat cheese on one side, bacon on the other.

2. Add the tomato and avocado, drizzle on some hot sauce if that’s your jam. It’s my jam. It’s my jam all day long.

3. Now is the time to cook up your eggs—they only take a minute and that way they don’t get cold while you’re fumbling around trying to assemble these delicious, delicious works of art.

4. Add the eggs and carefully put that puppy together. Nobody said this was going to be an easy sandwich to eat. Don’t let that deter you.

John was all, “Yours isn’t messy enough. A good sandwich is messy!” And then our son stared as us with confusion wondering why the heck his parents were taking pictures of their breakfast.
