Teriyaki Turkey Lettuce Wraps


My little sister is a hippie. Well, somebody had to say it. If you let her, she’ll talk your ear off about the benefits of coconut oil and how hemp oil can cure cancer. Don’t even get her started on apple cider vinegar and how the drug companies just don’t want you to know about its many benefits.  I’m telling you guys, she’s a tree-hugger. But in all her hippie-ness, she did bring up a good point. You see, she mentioned one time in passing about how everybody should make sure that 51% of their diet is raw fruits/veggies. That got me thinking: 51%? Heck, I don’t even think that half of my food, raw or otherwise, consists of fruits/veggies on a daily basis. And while her percentage reference could be from some weird “Conspiracy Theory Today” digest, she did get me thinking about how John and I really need to incorporate more vegetables and fruit into our daily diet. As you probably know from our under $200 monthly meal plan, we get all our fresh food at the beginning of the month and then use only frozen for the rest of the month in an effort to only make one grocery trip a month (and thus save money by avoiding unnecessary purchases/impulse buys).

So we decided that it was worth it for us to try and up our monthly budget a bit and hit up the farmers market once a week in an effort to incorporate more of the good stuff into our daily diet. We’ve started eating fresh fruit alongside our regular breakfasts, bell pepppers and carrots with our lunches, and tons of veggies at dinner. My favorite meal this month (and I realize we’re only halfway through) has been this knock-off recipe from this awesome food vendor that comes to my workplace once a week. So here ya have it: Teryaki Turkey Lettuce Wraps.

Ingredients
1 bottle of Teryaki sauce (we used kikkoman low sodium)
1 lb ground turkey breast
broccoli slaw (from the pre-packaged salad aisle of your local grocery store. I was actually going to use sliced zucchini but this stuff was on sale so I got it instead and saved the zucchini for another meal.)
romaine lettuce (we used organic because the hippie sister is rubbing off on me—either way, wash it thoroughly---we just dunk in water with a few tablespoons of white vinegar—kills all the bacteria without the chemicals on your food. That tidbit is from my hippie dad.)
Ready for the easiest meal ever? Basically you cook up the ground turkey for about 5 minutes or until cooked thoroughly. Add a bag of broccoli slaw.

Add 1/2 cup of water and cover, cooking for 3-5 minutes (depending on how crunchy you want the slaw to stay.) Add about half the bottle of teryaki sauce and mix up real nice like.

Add a few scoops of the mixture onto each romaine lettuce leaf and serve.

Viola! A terrible iphone picture of an amazingly easy, healthy, and delicious meal!  We served it with fresh broccoli tossed in apple cider vinegar/soy sauce/olive oil mix. Because, ya know, 51%.

These are more than easy—they are easy peasy. And delicious. And help us reach our 51%. My hippie sister would be so proud…until she realizes I am eating turkey. Then she’s probably punch me.
